Meatballs

 

1/2 pound ground pork

1/2 pound ground beef OR 1 pound ground turkey (like Ferndale Market)

2 medium onions, diced (you can also buy frozen, pre-diced!)

3 cloves garlic, minced or pressed

1/4 c. parsley, chopped

1/2 c. Parmesan cheese (Romano or nutritional yeast are great substitutes)

1/2 c. dry Italian breadcrumbs (I use gluten free)

1 egg

2 tsp salt

1/2 tsp black pepper

  • Preheat oven to 350 degrees.

  • Brown onions in oil.

  • Mix ingredients in large bowl.

  • Form into small balls and place on cookie sheets.

  • Brown 8 minutes, then flip with tongs or metal spatula and brown another 8 minutes.
