Build Your Own Lunch Bowl
If you ask my daughter what my favorite food is, she’ll tell you it’s salad. I do make pretty great bowls of goodness, and I have one most days for lunch.
Most involve leftovers - it’s efficient, and avoids food waste.
I pick one green thing as a base
Dino kale
Spinach
Cabbage/kale slaw
Then pick a protein
Rotisserie chicken
Chicken sausage
Leftover bratwurst or burger
Diced ham
Any meat we grill
Canned salmon or tuna
Salmon burger
Leftover taco meat
Tofu
Edamame
I’ll add a carb
Quinoa
Roasted sweet potatoes
Other roasted potatoes
Wild or brown rice
And leftover roasted veggies
Mushrooms
Brussels sprouts
Broccoli
Cauliflower
Turnips
If serving cold, I add fruit + raw veggies
Chopped apples or pear
Blueberries
Blackberries
Carrots
Mushrooms
I make my own dressings
Cold salad: olive oil, Dijon mustard, apple cider vinegar or fresh lemon juice, salt, pepper
Warm salad: olive or avocado oil, with salt and pepper or coconut aminos
